Vegan Peri-Peri Cauliflower Tacos
1 head cauliflower, cut into bite sized pieces
6 tsp. Olive oil
2 tsp. Garlic powder
1 1/2 cup Mild DichickO's Peri-Peri Sauce
Black Pepper
8 taco-sized flour tortillas
1 head iceburg lettuce
2 avocados, sliced
Green onions for garnish
Vegan Ranch to taste (store bought or make own)

How to prepare:
Preheat oven to 425 F. Put baking sheet in oven to heat
(no coating, just a dry baking sheet or roasting sheet)
Put cauliflower in large bowl.
In a small bowl, combine 3/4 cups of the Peri-Peri sauce
with all of the Olive oil, garlic powder and black pepper
Pour mixture over cauliflower and toss to coat.
Put Cauliflower on hot roasting pan and roast for 20 minutes,
turning halfway through.
5 minutes before cauliflower is done,
heat up remaining peri-peri sauce in a saucepan.
Remove cauliflower from the oven and place it back in the bowl. Toss in remaining Peri-Peri sauce and stir.
To assemble tacos, load each tortilla with lettuce, avocado and cauliflower. Drizzle with vegan ranch and top with cilantro or green onions.
Makes 8 tacos.
