Peri-Peri Tacos
8 tortillas
4 chicken breasts - marinated and diced
1 avocado
Juice of 1 lime
2 cloves garlic
1 handful fresh cilantro
1/4 low-fat cup Greek Yogurt
pinch Celtic Sea Salt
1/4 head thinly sliced cabbage
1/2 thinly sliced red onion
1/4 cup Braggs Apple Cider Vinegar
1 pinch Stevia (or sweetener of your choice)
1 Tbsp. Olive Oil
Make 3 separate components:
1. Make the chicken
Marinate chicken in Peri-Peri Marinade for at least 12 hours before cooking. Cook, cube or shred and coat in your favorite Peri-Peri sauce right before serving.
2. Make the Avocado Crema
Mix the following in a blender:
Juice of 1 Lime
Avocado
2 cloves Garlic
1 handful of fresh Cilantro
1/4 cup Greek Yogurt
Pinch Sea Salt
3. Make the Slaw (best if at least a few hours ahead of time)
Slice (very thinly) 1/4-1/2 head cabbage
Slice (very thinly) 1/4 - 1/2 red onion
Mix the Apple Cider Vinegar, Stevia and Olive Oil.
Pour over sliced cabbage and onion.
Assemble Tacos!
Make Taco: Serves 4
Lightly toast tortilla in a skillet (enhances flavor)
Put a line down the middle of Avocado Crema
Add layer of slaw
Toss Chicken in your favorite Peri-Peri sauce and place on slaw
Top with fresh Cilantro and Peri-Naise
